Franklin Barbecue. Just mention the name in a crowded room anywhere in the country and someone will approach you and start talking BBQ
Due in part to Aaron Franklin and his generous training videos on Youtube and a PBS show based in Austin, TX, in few short years it has become a premiere destination for barbecue enthusiasts
Not only does he provide some of the best instruction videos on smoking Brisket, Pork, Ribs and more, he also has some excellent instructional videos on building his own smokers and the many iterations that he’s gone through over the years. https://www.pbs.org/video/bbq-franklin-episode-4-pits/
Franklin started out in his backyard cooking for friends and family and as his skills improved he finally opened up a small barbecue trailer on the side of the interstate in Austin, TX in 2009.
Today, the line outside his very popular restaurant starts forming at 5:30 am for the 11am opening. The line will eventually string around the block and when the meats are gone that’s all there is and the folks at the end of the line go home hungry. This has launched the pilgrimage for many to make the trek to Austin and document their visit.
Following are two of my favorite videos documenting a visit to Franklin BBQ
